When they discovered that the global market was dominated by cassia — a harsher, inferior substitute often mislabeled as “cinnamon” — they felt a deep responsibility to protect the integrity of the spice they grew up with. Cassia contains significantly higher levels of coumarin, making it unsuitable for regular consumption, while true Ceylon cinnamon remains naturally gentle, antioxidant-rich and supportive of overall wellness.
