Ceylon Cinnamon, known as “true cinnamon,” is lighter in color and has a delicate, refined flavor compared to the more robust, sometimes bitter taste of Cassia. Ceylon cinnamon also contains ultra lower levels of coumarin, making it safer for daily consumption.
Ceylon Cinnamon is versatile! The perfect way is to brew Ceylon cinnamon Flakes (Alba Brew) or try adding it to your coffee, tea, smoothies or oatmeal for a subtle, aromatic flavor boost. It also works beautifully in savory dishes like stews or roasted vegetables.

Yes, Ceylon Cinnamon is generally considered safe for regular use, especially due to its ultra lower coumarin content compared to Cassia. However, moderation is key, especially for those with medical conditions.
Alba is the highest and most expensive grade of Ceylon cinnamon. Grading is based on the diameter of the cinnamon quills, and Alba quills are typically around 6–7 mm (about pencil thickness). Alba is rare, very light golden-brown, and known for its refined flavour.
When we say “Alba-grade outer layer,” we mean we use only the outer layer taken from the finest Alba-grade Ceylon cinnamon. In other words, we start with Alba-grade cinnamon (the highest grade) and then select the outer layer from that premium Alba material for our products.
Ceylon cinnamon is commonly grouped into four major categories based on quill diameter: Alba, Continental, Mexican, and Hamburg. Alba is the finest and most expensive category. There are also well-known sub-grades such as C5 Special, C5, C4, plus M grades (Mexican category), H grades (Hamburg category), and Quillings (broken quill pieces sorted by size).
These are grades within the Continental category. Generally:
- C5 Special is the next grade after Alba (commonly 7–9 mm)
- C5 follows (commonly 10–12 mm)
- C4 is thicker again (commonly 13–14 mm)
They’re graded by quill diameter and overall consistency.
Quillings are broken pieces that result from the baling process. They are typically classified as Quillings No.1, No.2, and No.3, based on piece size — No.1 has the largest pieces, followed by No.2 and No.3.
Store Ceylon Cinnamon in a cool, dry place, away from direct sunlight. An airtight container helps preserve its aroma and flavor for longer periods.
